Almond-Raisin Granola

"When we visit our daughter at Amherst College in Massachusetts, my husband and I stay at The Lord Jeffery Inn," says Caroline I. Cameron of Washington, D.C.. "The granola at breakfast is terrific. I would be grateful if you could get the recipe from their chef so that I can surprise my husband by making the granola at home."

Recipe Ingredients

  Nonstick vegetable oil spray
3 cups 187g / 6.6ozOld-fashioned oats
1 cup 93g / 3.3ozSlivered almonds
3/4 cup 69g / 2.4ozShredded sweetened coconut
1/3 cup 36g / 1.3ozSesame seeds
6 tablespoons 90mlPure maple syrup
6 tablespoons 90mlDark brown sugar - (packed)
1/4 cup 59mlVegetable oil
2 tablespoons 30mlWarm water
1/2 teaspoon 2.5mlSalt
1 cup 160g / 5.6ozGolden raisins

Recipe Instructions

Preheat oven to 250 degrees. Lightly spray rimmed baking sheet with nonstick spray.

Toss oats and next 3 ingredients in large bowl. Whisk syrup, brown sugar, oil, 2 tablespoons warm water and salt in small bowl to blend. Pour syrup mixture over oat mixture and stir to combine.

Transfer to prepared baking sheet. Bake until evenly browned, stirring occasionally, about 1 hour 15 minutes. Cool. Transfer to large bowl. Mix in raisins. (Can be made 1 week ahead. Store in airtight container.)
