Peas With Celery Root

Celery root, a popular fall vegetable, tastes like a cross between celery and parsley.

Recipe Ingredients

1 1/4 lbs 567g / 20ozCelery root (celeriac) - peeled, and
  Cut into 1/2" pieces
1/4 cup 49g / 1.7ozButter - (1/2 stick)
1   Shallot - chopped
1   Frozen petite peas - (16 oz) - thawed
1 teaspoon 5mlCelery salt
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Boil celery root in large pot of boiling salted water until just tender, about 5 minutes. Drain. Melt butter in heavy large pot over medium heat. Add shallot and saute until just tender, about 3 minutes. Add celery root, peas, and celery salt; saute until vegetables are heated through, about 8 minutes. Season to taste with salt and pepper.

This recipe yields 6 to 8 servings.
