Red Bell Pepper, Spinach, Goat Cheese Salad With Oregano Dre

This delicious and easy-to-make salad would be nice with grilled lamb or steak.

Recipe Ingredients

2 tablespoons 30mlExtra-virgin olive oil
2 tablespoons 30mlFresh lemon juice
1 tablespoon 15mlChopped fresh oregano
  Salt - to taste
  Freshly-ground black pepper - to taste
4 cups 160g / 5.6ozBaby spinach leaves - (packed) - coarsely chopped
1 1/2 cups 219g / 7.7ozRed bell peppers - diced (large)
1 1/2 cups 165g / 5.8ozDiced celery - (abt 3 stalks)
3/4 cup 109g / 3.8ozCrumbled soft fresh goat cheese
1/3 cup 20g / 0.7ozChopped red onion

Recipe Instructions

Whisk oil, lemon juice, and oregano in large bowl to blend. Season to taste with salt and pepper. Add spinach, bell peppers, celery, goat cheese, and red onion to dressing; toss to coat. Divide salad among 4 plates and serve.
