Italian Pumpkin Strata

This vegetable-filled strata employs bread, cheese, milk, pumpkin and eggs to create a moist and delicious casserole you can cut into squares or wedges and serve with a platter of fresh fruit for a smashing breakfast or brunch!

Recipe Ingredients

1 tablespoon 15mlVegetable oil
1 lb 454g / 16ozSweet Italian sausage - casing removed
1 cup 62g / 2.2ozChopped onion
1/2 cup 73g / 2.6ozChopped green bell pepper
1/2 cup 73g / 2.6ozChopped red bell pepper
2   Garlic cloves - finely chopped
12 cups 2844mlCubed (1 1/2") Italian or French bread
  = (abt a 1-lb loaf)
2 cups 292g / 10ozShredded mozzarella cheese - (8 oz)
3 cups 711mlNestle Carnation evaporated milk
  = (two 12-oz cans)
1 3/4 cups 414mlLibby's 100% pure pumpkin - (15-oz can)
4   Large eggs
1 teaspoon 5mlSalt
1/2 teaspoon 2.5mlFreshly-ground black pepper
1/2 teaspoon 2.5mlDried oregano - crushed
1/2 teaspoon 2.5mlDried basil - crushed
1/2 teaspoon 2.5mlDried marjoram - crushed

Recipe Instructions

Preheat oven to 350 degrees. Grease 13- by 9-inch baking pan.

Heat vegetable oil in large skillet over medium-high heat. Add sausage, onion, bell peppers and garlic. Cook, stirring to break up sausage, for 7 to 10 minutes or until sausage is no longer pink; drain.

Combine bread cubes, cheese and sausage mixture in large bowl. Beat evaporated milk, pumpkin, eggs, salt, pepper, oregano, basil and marjoram in medium bowl. Pour over bread mixture, pressing bread into milk mixture. Pour into prepared baking pan. Bake for 30 to 35 minutes or until set. Serve warm.

This recipe yields 12 servings.
