Brennan's Marchand De Vin Sauce

6 tablespoons 90mlButter
1/2 cup 31g / 1.1ozFinely-chopped onion
1 1/2 teaspoons 7.5mlFinely-chopped garlic
1/2 cup 73g / 2.6ozFinely-chopped scallions
1/2 cup 118mlFinely-chopped boiled ham
1/2 cup 73g / 2.6ozFinely-chopped mushrooms
1/3 cup 20g / 0.7ozAll-purpose flour
2 tablespoons 30mlWorcestershire sauce
2 cups 474mlBeef stock
1/2 cup 118mlRed wine
1 1/2 teaspoons 7.5mlThyme leaves
1   Bay leaf
1/2 cup 73g / 2.6ozFinely-chopped fresh parsley
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Melt the butter in a large saucepan or Dutch oven and saute the onion, garlic, scallions and ham for 5 minutes. Add the mushrooms, reduce the heat to medium and cook for for 2 minutes.

Blend in the flour and cook, stirring for 4 minutes, then add the Worcestershire sauce, beef stock, wine, thyme and bay leaf. Simmer until the sauce thickens, about 1 hour.

Before serving, remove the bay leaf and add the parsley. Season with salt and pepper to taste.

This recipe yields 3 cups.
