Recipe Ingredients

1 cup 62g / 2.2ozSelf-rising cornmeal
1/2 cup 31g / 1.1ozSelf-rising flour
1/2 cup 31g / 1.1ozOnion - finely chopped (small)
1   Egg - lightly beaten
1/4 cup 59mlCanned creamed corn, Silver Queen variety
3/4 cup 177mlWater
1 1/2 tablespoons 22mlBeer - (to 2)
  Oil, for deep fryer

Recipe Instructions

In a small bowl, combine the cornmeal and flour. Stir in onion, egg and corn. Add water and beer and form into a stiff batter. Heat oil in a deep fryer to 350 degrees. Shape batter into small balls using a small ice cream scoop. Fry in single-layer batches in hot oil until golden brown, about 2 minutes. Serve hot.

This recipe yields about 24.
