Commander's Garlic-Anchovy Salad Dressing Recipe - Cooking Index
| 2 oz | Anchovy fillets - see * Note | |
| 12 | Garlic cloves - mashed | |
| 1 | Egg | |
| 1/4 | Onion - chopped (medium) | |
| 1/2 cup | Freshly-groate Parmesan cheese | |
| 1 1/2 teaspoons | Coarsely-ground black pepper | |
| 2 tablespoons | Red wine vinegar | |
| 1/2 cup | Olive oil - plus | |
| 2 tablespoons | Olive oil | |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
* Note: The anchovies are packaged in small tins. Two ounces is about 12 fillets or 2 tablespoons.
Place all ingredients except oil in food processor. Process and add oil slowly while processor is running. Adjust salt and pepper if needed.
