Laura's Crockpot Chicken Marengo Recipe - Cooking Index
3 lbs | 1362g / 48oz | Skinnless chicken parts - cut up |
1 | Diced tomatoes - (15 oz) | |
1 | Onion - sliced (medium) | |
10 | Bacon - divided | |
1 | Tomato paste - (6 oz) | |
1 | Mushrooms | |
(or use fresh sliced mushrooms) |
Spray sides of crockpot with non-stick spray. Place washed, skinned chicken parts in bottom of crockpot. Scatter onion slices on top. Lay 5 slices of bacon on top of chicken and onions. Add can of diced tomatoes (with juice). Cook on HIGH for 1 hour then switch to LOW for 2 hours.
Add the can of tomato paste and the mushrooms. Cook on LOW for about 1 more hour. (Some crocks tend to cook a bit fast on low, so you may need to adjust times).
Meanwhile, (optional) cook then crumble the remaining 5 slices of bacon. When serving, sprinkle the crumbled bacon over top of chicken. Serve over rice.
