Spinach Orange Salad Recipe - Cooking Index

2 tablespoons | 30ml | Canola oil |
3 tablespoons | 45ml | Orange juice |
1 tablespoon | 15ml | Lemon juice |
1 teaspoon | 5ml | Grated orange peel |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Salad | ||
5 cups | 200g / 7.1oz | Torn fresh spinach leaves - washed, dried |
1/2 cup | 118ml | Mandarin oranges in their own juice - drained |
1/2 cup | 118ml | Thinly-sliced dried apricots |
1 cup | 62g / 2.2oz | Red onion - thinly sliced (small) |
1 tablespoon | 15ml | Toasted pine nuts |
Whisk all dressing ingredients together and set aside.
In a large salad bowl, toss together the salad ingredients. Add the dressing and toss to coat. Serve immediately.
This recipe yields 6 servings. Serving size: 1 cup.
