Spinach Orange Salad

Recipe Ingredients

  Dressing
2 tablespoons 30mlCanola oil
3 tablespoons 45mlOrange juice
1 tablespoon 15mlLemon juice
1 teaspoon 5mlGrated orange peel
  Salt - to taste
  Freshly-ground black pepper - to taste
  Salad
5 cups 200g / 7.1ozTorn fresh spinach leaves - washed, dried
1/2 cup 118mlMandarin oranges in their own juice - drained
1/2 cup 118mlThinly-sliced dried apricots
1 cup 62g / 2.2ozRed onion - thinly sliced (small)
1 tablespoon 15mlToasted pine nuts

Recipe Instructions

Whisk all dressing ingredients together and set aside.

In a large salad bowl, toss together the salad ingredients. Add the dressing and toss to coat. Serve immediately.

This recipe yields 6 servings. Serving size: 1 cup.
