Chicken And Spinach Salad

Add some pizzazz to ordinary chicken salad with blue cheese, red onion, grapefruit and fat-free citrus dressing.

Recipe Ingredients

12 oz 340gChicken tenders
  Nonstick cooking spray - as needed
4 cups 948mlShredded spinach
2 cups 474mlWashed and torn romaine lettuce
8   Thin slices red onion
2 tablespoons 30mlCrumbled blue cheese - (1/2 oz)
1 tablespoon 15mlGrapefruit - peeled, sectioned (large)
1/2 cup 118mlFrozen citrus blend concentrate - thawed
1/4 cup 59mlPrepared fat-free Italian salad dressing

Recipe Instructions

Cut chicken into 2- by 1/2-inch strips. Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add chicken; cook and stir 5 minutes or until no longer pink in center. Remove from skillet.

Divide spinach, lettuce, onion, cheese, grapefruit and chicken among 4 salad plates. Combine citrus blend concentrate and Italian dressing in small bowl; drizzle over salads. Garnish with assorted greens, if desired.

This recipe yields 4 servings.
