Black Beans And Rice

Recipe Ingredients

1 teaspoon 5mlOlive oil
1 teaspoon 5mlOnion - chopped (medium)
2   Garlic cloves - minced
3/4 cup 120g / 4.2ozShort-grain white rice
1 1/2 cups 355mlLow-fat low-sodium chicken broth
1 teaspoon 5mlCumin
1/4 teaspoon 1.3mlCayenne pepper
3 1/2 cups 560g / 19ozBlack beans - drained

Recipe Instructions

In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.

Add the chicken broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

This recipe yields 6 servings. Serving size: 1/2 cup.
