Frozen Nectarine Yogurt

Juicy summer nectarines jazz up plain yogurt. You can substitute peaches or apricots if you wish.

Recipe Ingredients

5 tablespoons 75mlNectarines - chopped (small)
1 cup 237mlWater
1/4 cup 59mlHoney
1 tablespoon 15mlFresh lemon juice
1 teaspoon 5mlVanilla
1/4 cup 59mlUnsweetened apple juice
1 cup 237mlPlain low-fat yogurt

Recipe Instructions

Combine the nectarines, water, and honey in a medium saucepan. Cook over medium heat until the nectarines are soft, about 10 minutes. Puree the mixture in a blender or food processor. Stir in the lemon juice, vanilla, and apple juice. Set aside to cool for 30 minutes.

Whisk the yogurt into the nectarine mixture. Pour into an 8- by 8-inch pan and freeze until crystals form around the edges, about 45 minutes. Stir the crystals into the middle of the pan and return to the freezer.

When mixture is lightly frozen through, whip the mixture on low with an electric mixture until it is light in color, about 5 minutes. Spoon the mixture into a freezer storage container and freeze for about 3 hours. Let soften at room temperature before serving.

This recipe yields 6 servings. Serving size: 1/2 cup.
