Asparagus Almondine

Recipe Ingredients

3 cups 711mlDiagonally sliced asparagus
2 tablespoons 30mlLow-calorie margarine
1/4 cup 23g / 0.8ozSliced almonds
  Freshly-ground black pepper - to taste
1 pinch  Salt - (optional)

Recipe Instructions

Blanch the asparagus in boiling water for 2 minutes and drain.  Melt the margarine in a skillet over medium-high heat. Add the almonds and saute until the almonds are toasted, about 3 minutes.  Top the asparagus with the almonds. Season with pepper and salt and serve.
