Asparagus And Roasted Red Pepper Salad

Recipe Ingredients

2 cups  Steamed sliced fresh asparagus
1/2 cup  Diced roasted red pepper
1/2 cup  Sliced artichoke hearts
2 tablespoons  Olive oil
3 tablespoons  Fresh lemon juice
2 tablespoons  Red wine vinegar
1 teaspoon  Minced fresh dill
1 tablespoon  Minced fresh Italian parsley

Recipe Instructions

Combine the asparagus, red pepper, and artichoke hearts in a salad bowl.

Whisk together the remaining ingredients to make the dressing and pour over the salad. Chill and serve cold.
