Quick Tomato Sauce Recipe - Cooking Index
Taste the sauce before adding salt. Some canned tomatoes are much saltier than others and may require very little extra seasoning.
Courses: Sauces3 tablespoons | 45ml | Olive oil |
2 | Garlic cloves - minced fine | |
1 | Crushed tomatoes - (28 oz) | |
2 tablespoons | 30ml | Minced fresh parsley or basil leaves |
1/2 teaspoon | 2.5ml | Salt - or to taste |
Several grindings of fresh black pepper |
Heat oil in a medium-size saucepan. Add garlic and saute over medium heat until pale yellow in color, about 1 minute.
Add tomatoes, herbs, salt, and pepper and bring sauce to a boil. Lower heat and simmer gently until sauce thickens slightly, about 10 minutes. Adjust salt and pepper as needed.
This recipe yields 3 cups.
