Grated Parsnip And Carrot Salad With Citrus Dressing Recipe - Cooking Index
Although parsnips are not that easy to grate, they work well with carrots in a simple salad. Be sure to let the dressed salad sit in the refrigerator for at least an hour before serving to allow the flavors to blend. You can double this recipe to serve 4.

= (abt 1 cup) | ||
1/3 lb | 151g / 5.3oz | Carrots - peeled, grated |
= (abt 1 cup) | ||
1 | Orange - juiced | |
1/2 | Lime - Juiced | |
1/2 teaspoon | 2.5ml | Granulated sugar |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
Toss all ingredients in a bowl until thoroughly mixed, cover, and place in the refrigerator for at least 1 hour before serving.
This recipe yields 2 servings.
