Pumpkin And Vegetable Chowder

Recipe Ingredients

1   Onion - chopped (large)
1/4 cup 59mlCorn oil
1 tablespoon 15mlTamari sauce
1   Ripe tomato - peeled and diced
4 cups 948mlVegetable stock
4 cups 948mlPureed or diced pumpkin
1 tablespoon 15mlMaple syrup
1   Broccoli - steamed, and
  Coarsely chopped
1/2 cup 118mlHeavy cream
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In a large pot, cook the onion in the oil until it is translucent. Add the tamari sauce, tomato, stock, pumpkin, and maple syrup and combine well. Simmer for 30 minutes.

Add the broccoli and cream and simmer another 10 to 15 minutes. Adjust the seasoning, adding salt and pepper to taste.

This recipe yields 4 to 6 servings.
