Lamb Chops Recipe - Cooking Index
1/4 cup | 49g / 1.7oz | Butter - room temperature |
1 teaspoon | 5ml | Coarse salt |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
1/2 teaspoon | 2.5ml | Ground cinnamon |
8 | Loin-cut lamb chops - (3 to 4 oz ea) |
Mix together butter, salt, pepper and cinnamon to make thick paste. Rub 1/2 tablespoon seasoned butter over each lamb chop.
Cook lamb chops in large dry skillet set over medium-high heat until browned, 4 to 5 minutes per side. Turn once halfway through cooking. (If exposed bone looks bloody, hold chop with kitchen tongs and press bone against skillet 10 seconds be-fore removing from skillet to rest.)
Let chops rest 2 to 3 minutes before serving.
