Tart Apple Salad With Arugula, Romaine And Blue Cheese

Recipe Ingredients

1 teaspoon 5mlMinced shallot
1 teaspoon 5mlDijon mustard
2 tablespoons 30mlWhite balsamic vinegar
3 tablespoons 45mlOlive oil
2 1/2 teaspoons 12mlHoney
1/4 teaspoon 1.3mlSalt
  Freshly-ground black pepper - to taste
1   Unpeeled tart apple - unpeeled, halved,
  Cored, and thinly sliced
1 1/2 cups 355mlBaby arugula (stems trimmed) - crisped
3 cups 120g / 4.2ozTorn romaine leaves - crisped
3 tablespoons 45mlCrumbled mild blue cheese

Recipe Instructions

Combine the shallot, mustard, vinegar, oil, honey, salt and pepper to taste in a small dish. The vinaigrette can be made a few hours ahead and kept at room temperature.

Place the apple slices in a large bowl. Toss with 5 tablespoons of the vinaigrette. Add the arugula, romaine leaves and blue cheese. Use your hands to toss until the leaves are coated, adding more vinaigrette to taste (you may not use it all). Taste; adjust seasoning. Serve immediately on chilled plates.

This recipe yields 2 to 4 servings.
