Scrape the mustard into a shallow bowl and place in a smoker at 225 degrees for 1 hour.
Puree the walnut pieces in a food processor, then add half the mustard and process until smooth. Add more mustard as desired for stronger taste or thinner texture.
This recipe yields about 2 cups.
Each tablespoon: 54 calories; 80 mg sodium; 0 cholesterol; 5 grams fat; 0 saturated fat; 2 grams carbohydrates; 1 gram protein; 0.73 gram fiber.
