Pea And Bean Salad

Recipe Ingredients

1/3 lb 151g / 5.3ozSnow peas - trimmed, and
  Strings removed
1/3 lb 151g / 5.3ozGreen beans - cut 2" pieces
2 tablespoons 30mlOlive oil
1 tablespoon 15mlWhite wine vinegar
1/2 teaspoon 2.5mlSalt
1/4   Sugar substitute
1/2 teaspoon 2.5mlDried tarragon

Recipe Instructions

Cook green beans in a large pot of lightly salted water 3 to 4 minutes, until crisp-tender. Add snow peas during the last minute of cooking time. Drain and return to pot.

Mix in oil, vinegar, salt, sugar substitute and tarragon. Toss to coat vegetables evenly.

This recipe yields 4 servings.
