Florida Red Snapper

This is standard fare in the Florida Keys. Serve with a cool tossed salad and sweet potato fries. For dessert, Key Lime Pie is almost mandatory.

Recipe Ingredients

2 lbs 908g / 32ozRed snapper fillets
1/4 cup 15g / 0.5ozGrated onion
2 tablespoons 30mlOrange juice
2 tablespoons 30mlLemon juice
2 teaspoons 10mlGrated orange rind
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlNutmeg

Recipe Instructions

Thaw fillets if frozen. Cut fish into 6 portions. Place in a single layer, skin-side down, in a well-greased baking dish, 12 by 8 by 2 inches.

Combine onion, orange and lemon juice, ornage rind, and salt. Pour over fish; cover and place in refrigerator to marinate 30 minutes.

Sprinkle fish with nutmeg and pepper. Bake in a moderate oven, 350 degrees, for 25 to 30 minutes or until fish flakes easily when tested with fork.

This recipe yields 6 servings; 3 carb grams per serving.
