Hearty Sausage-Vegetable Strata

Recipe Ingredients

1 lb 454g / 16ozMild sausage
6   Atkins bread - cut 1/2" cubes
1 cup 146g / 5.1ozCooked broccoli florets
1 cup 146g / 5.1ozCauliflower florets
1/2 cup 55g / 1.9ozCooked baby carrots
8   Eggs
1 cup 237mlCream - mixed with
1/2 cup 118mlWater
1 teaspoon 5mlDry mustard
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
6 oz 170gShredded Cheddar cheese - (1 1/2 cups)

Recipe Instructions

Remove sausage from casing and brown in a large nonstick skillet. Transfer to paper towels to drain. Spray a 13- by 9-inch baking dish with nonstick cooking spray.

Combine sausage, bread cubes and vegetables. Pat in an even layer in prepared dish.

Mix eggs, cream mixture, mustard, salt and pepper. Pour over vegetable and bread mixture. Sprinkle with cheese. Cover with plastic wrap. Refrigerate 4 hours or up to overnight.

Heat oven to 375 degrees. Bake strata 40 to 50 minutes, or until knife inserted near the center comes out clean.

This recipe yields 8 servings.
