In a blender combine bake mix, eggs, water, maple extract and salt. Heat an 8-inch nonstick skillet over high heat until very hot. Brush with oil. Pour in 3 tablespoons batter and rotate pan to spread batter evenly. Cook until golden 30 to 60 seconds, flip and cook other side. Repeat with remaining batter. Keep warm.
With an electric mixer on medium, whip cream until soft peaks form. Fold in sugar substitute. Serve crepes with sweetened cream and Atkins Sugar Free Pancake Syrup.
