Herbed Boston Lettuce Salad

Boston lettuce is very delicate. This light Shallot Vinaigrette is just the right dressing for these leaves.

Recipe Ingredients

2   Large heads Boston lettuce - rinsed, dried,
  And tough outer leaves discarded
2   Shallots - peeled, diced fine (large)
3/4 cup 30g / 1.1ozSmall whole flat-leaf parsley leaves
  Coarse salt - to taste
  Freshly-ground black pepper - to taste
1/4 cup 59mlShallot Vinaigrette - (see recipe)

Recipe Instructions

Place the lettuce leaves in a large salad bowl. Toss with the shallots and the parsley. Season with salt and pepper. Lightly toss with the Shallot Vinaigrette. Serve from the bowl or divide among 8 salad plates.

This recipe yields 8 servings.
