Potato And Pickle Salad Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Red potatoes |
1/4 cup | 59ml | Mayonnaise |
1/4 cup | 59ml | Whole-grain mustard |
1/4 cup | 59ml | Prepared horseradish |
= (or fresh grated) | ||
1/4 cup | 59ml | Pickle juice |
1 cup | 62g / 2.2oz | Onion (medium) |
2 | Half sour pickles | |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Quarter the potatoes and boil until just cooked. Drain and rinse.
Mix together mayonnaise, mustard, horseradish, and pickle juice.
Transfer still warm potatoes to mixing bowl and blend in dressing. Chop pickles and onions to 1/4-inch dice and add. Season with salt and pepper. Serve chilled.
