Pimento-Grilled Lamb Chops

Recipe Ingredients

4 sections  Fresh thyme - picked
1 section  Onion - sliced (medium)
4   Garlic cloves - sliced
  Pimento-Infused Oil - (see recipe)
  Freshly-ground black pepper - to taste
6   Lamb chops - (to 8)
  Kosher salt - to taste

Recipe Instructions

Mix thyme, onions, garlic, and some pimento oil together and place half in a shallow baking pan. Sprinkle black pepper on both sides of chops and place on top of mixture. Put remaining mix on top and marinate for 1 to 2 hours.

Just before grilling, season with salt. Grill to desire doneness.

This recipe yields 4 servings.
