Peach Cobbler Recipe - Cooking Index
2 cups | 125g / 4.4oz | All-purpose flour |
1 tablespoon | 15ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
8 tablespoons | 120ml | Unsalted chilled butter |
3/4 cup | 148g / 5.2oz | Sugar - divided |
1 cup | 237ml | Heavy cream |
6 cups | 1422ml | Peeled fresh or frozen peaches |
2 tablespoons | 30ml | Cornstarch |
1/2 teaspoon | 2.5ml | Ground cinnamon |
1 | Grated nutmeg |
Preheat oven to 375 degrees.
Mix flour, baking powder, and salt in large mixing bowl. Cut in butter with pastry cutter or hands until it resembles coarse meal. Add 1/2 cup of the sugar and cream. Knead approximately 3 minutes and let rest.
Toss fruit with cornstarch, remaining 1/4 cup sugar, and spices. Place fruit mixture in a 9- by 13-inch glass or ceramic baking dish. Cover with gobs of the cobbler dough. Bake 35 minutes or until lightly browned.
This recipe yields 6 to 8 servings.
