Orchard Salad

Recipe Ingredients

1   Red leaf lettuce
1   Green leaf lettuce
1 teaspoon 5mlLemon juice
1   Crisp red apple - thinly sliced
  = (such as McIntosh or Paula Red)
1   Anjou pear - thinly sliced
2 tablespoons 30mlApple cider
2 tablespoons 30mlCider vinegar
1 teaspoon 5mlSugar
1/3 cup 78mlExtra-virgin olive oil
  Coarse salt - to taste
  Freshly-ground black pepper - to taste
8 oz 227gSharp cheddar - thinly sliced

Recipe Instructions

Coarsely chop lettuce. Squeeze a little lemon juice over apples and pears and toss with greens.

Combine cider, vinegar and sugar in a bowl and whisk in oil in a slow stream.

Pour dressing over salad and season salad with salt and pepper and toss salad to combine and coat evenly. Serve salad with a garnish of sliced sharp cheddar cheese.

This recipe yields 4 to 6 servings.
