Jicama, Cucumber, And Chile Slaw

Recipe Ingredients

1   English cucumber
1 x  Jicama - (abt 1/2 lb)
4 x  Carrots (medium)
5 tablespoons  Lime juice
6 tablespoons  Chopped fresh cilantro sprigs
2 tablespoons  Vegetable oil
1/2 teaspoon  Pepper flakes
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Seed cucumber and peel jicama. Cut cucumber, jicama, and carrots into 1 1/2-inch-long thin strips. Toss vegetables together with remaining ingredients and season with salt and pepper.

This recipe yields 4 servings.
