Mignonette Sauce II

1 tablespoon 15mlCrushed black peppercorns
3 tablespoons 45mlFinely-minced shallots
2/3 cup 157mlGood-quality red wine vinegar

Recipe Instructions

Combine the ingredients in a glass or stainless-steel bowl. Cover with plastic wrap and store at room temperature overnight. Mignonette sauce will keep for months in the refrigerator.

This recipe yields about 3/4 cup.
