Sesame Pea-Shoot Salad

Recipe Ingredients

1 cup 198g / 7ozSugar snap peas
1/2 cup 118mlSnow peas
1/2 cup 118mlShelled fresh green peas - (abt 1/2 lb in
2 teaspoons 10mlSesame seeds
1 tablespoon 15mlRice vinegar
1 tablespoon 15mlAsian sesame oil
1/2 tablespoon 7.5mlLight brown sugar - (packed) - or more to taste
2 teaspoons 10mlSoy sauce
6 cups 1422mlPea shoots

Recipe Instructions

In a kettle of boiling salted water cook sugar snap peas 2 minutes. Add snow peas and green peas and cook 1 minute. Drain peas in a colander and rinse under cold water. Pat peas dry between paper towels.

In a dry small skillet toast sesame seeds over moderate heat, stirring, until golden. In a small bowl whisk together sesame seeds, vinegar, oil, brown sugar, and soy sauce until sugar is dissolved.

In a bowl toss pea shoots and peas with dressing.

This recipe yields 4 servings.
