Cool Cucumber Salsa

Recipe Ingredients

4		Cucumbers - diced (large)
6		Vine ripe tomatoes - diced
1 tablespoon	15ml	Finely-chopped cilantro
1 tablespoon	15ml	Red onion - diced (medium)
1		Jalapeño - diced
1/2 cup	118ml	Rice wine vinegar
1		Dry ranch dressing
		Salt - to taste
		Freshly-ground black pepper - to taste

Recipe Instructions

Combine ingredients in a large bowl. Add vinegar, ranch dressing, salt and pepper, and toss until well coated. Add a pinch of sugar to balance vinegary taste.
