Grilled Shad Recipe - Cooking Index
3 lbs | 1362g / 48oz | Shad - whole, dressed |
1/2 cup | 118ml | Lemon juice |
1/4 cup | 59ml | Olive oil |
1 teaspoon | 5ml | Garlic salt |
3/4 teaspoon | 3.8ml | Dried oregano - crushed |
1/2 teaspoon | 2.5ml | Freshly-ground black pepper |
Combine lemon juice, olive oil, garlic salt, oregano and pepper. Make 4 to 5 shallow slits with a sharp knife on each side of the fish. Brush sauce on both the inside and outside of the fish.
Place fish in a well-greased, hinged wire grill rack. If you do not have a rack fish can be put on foil on the grill. Cook about 4 inches from moderately-hot coals or heat for 5 to 8 minutes.
Baste with sauce, turn, and cook for an additional 5 to 8 minutes or until fish begins to flake easily when tested with a fork.
This recipe yields 6 servings.
