Baked Weakfish With Herb Sauce

Recipe Ingredients

1 1/2 lbs 681g / 24ozWeakfish fillets - cut serving size
2 tablespoons 30mlLow-fat yogurt
3 tablespoons 45mlMayonnaise
1/4 teaspoon 1.3mlMarjoram
1/4 teaspoon 1.3mlThyme
1/4 teaspoon 1.3mlOnion powder
1/4 teaspoon 1.3mlRosemary
1/4 teaspoon 1.3mlTarragon
3 tablespoons 45mlChopped pimiento
1/3 cup 78mlDry vermouth or dry white wine
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Rinse weakfish fillets or portions and pat dry with a paper towel. Place fillets or portions in a baking dish coated with vegetable oil cooking spray.

Thoroughly mix low fat yogurt, mayonnaise, marjoram, thyme, onion powder, rosemary, tarragon and pimientos. Spread mixture evenly on top of fillets. Pour vermouth or dry white wine over fish. Bake uncovered at 350 degrees for 25 to 30 minutes or until fish flakes easily with a fork.
