Baked Weakfish With Herb Sauce Recipe - Cooking Index
| 1 1/2 lbs | 681g / 24oz | Weakfish fillets - cut serving size |
| 2 tablespoons | 30ml | Low-fat yogurt |
| 3 tablespoons | 45ml | Mayonnaise |
| 1/4 teaspoon | 1.3ml | Marjoram |
| 1/4 teaspoon | 1.3ml | Thyme |
| 1/4 teaspoon | 1.3ml | Onion powder |
| 1/4 teaspoon | 1.3ml | Rosemary |
| 1/4 teaspoon | 1.3ml | Tarragon |
| 3 tablespoons | 45ml | Chopped pimiento |
| 1/3 cup | 78ml | Dry vermouth or dry white wine |
| Salt - to taste | ||
| Freshly-ground black pepper - to taste |
Rinse weakfish fillets or portions and pat dry with a paper towel. Place fillets or portions in a baking dish coated with vegetable oil cooking spray.
Thoroughly mix low fat yogurt, mayonnaise, marjoram, thyme, onion powder, rosemary, tarragon and pimientos. Spread mixture evenly on top of fillets. Pour vermouth or dry white wine over fish.
Bake uncovered at 350 degrees for 25 to 30 minutes or until fish flakes easily with a fork.
