Steamed Salmon With Vegetable Relish

Recipe Ingredients

1   Salmon fillet (large)
1   Cucumber - chopped
1   Apple - chopped
1   Tomato - chopped
2 tablespoons 30mlApple cider vinegar
1 teaspoon 5mlDried tarragon
1 tablespoon 15mlOlive oil
  White Bean Relish
1 lb 454g / 16ozWhite navy beans (Northern bean)
2 tablespoons 30mlOlive oil
1   Green onions - white part minced,
  Chive (green) part cut in 1" pieces
1 tablespoon 15mlMinced garlic
1 cup 110g / 3.9ozChopped celery
1   Red bell pepper - chopped
1   Green pepper - chopped
3   Plum or Italian tomatoes - chopped
1 teaspoon 5mlPaprika
1 teaspoon 5mlGarlic salt
1/2 teaspoon 2.5mlFreshly-ground black pepper
  Red pepper - to taste
1 teaspoon 5mlOregano
1 teaspoon 5mlThyme
1/3 cup 48g / 1.7ozCoarsely-chopped fresh parsley

Recipe Instructions

Place salmon fillet on bamboo steamer rack. Place rack in wok over boiling water. Cover and steam for 10 to 12 minutes or until it flakes easily with a fork. Mix remaining ingredients together in a small bowl. When salmon is done, remove to a serving platter and top with relish.

For the White Bean Relish: Combine all ingredients and let chill one hour.
