Basic Vegetable Soup / Microwave

Recipe Ingredients

1 tablespoon 15mlOlive oil
1 tablespoon 15mlOnion - quartered, and (medium)
  Thinly sliced lengthwise
4   Ripe tomatoes - (1 lb) - cut 1/2" dice (medium)
4   Carrots - peeled, and (small)
  Cut into rounds
2   Celery ribs - cut 1/2" slices
1   Bay leaf (large)
1 teaspoon 5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
4 cups 948mlWater

Recipe Instructions

Place the oil and onion in a large bowl and microwave, uncovered, on High for 3 minutes, or until wilted.

Add the tomatoes, cover the bowl and microwave on High for 10 minutes, or until the tomatoes are soft and the mixture is soupy.

Add the remaining ingredients, cover and microwave on High for 20 minutes, or until the carrots and celery are tender. Remove the bay leaf. Serve immediately.

This recipe yields 3 to 4 servings.
