Thai Crab And Shrimp Soup - {Gaeng Chud Kaopot Aun}

Recipe Ingredients

1 teaspoon 5mlPeanut oil
5   Garlic cloves - minced
3   Shallots - minced
3 cups 711mlFish or chicken stock
2 tablespoons 30mlFish sauce - (if Nam Pla not
  Available, use any oriental fish sauce)
1/4 lb 113g / 4ozCrabmeat - shells removed
1/4 lb 113g / 4ozShrimp - shells removed
1   Creamed corn - (15 oz)
1/2 teaspoon 2.5mlBlack peppercorns - cracked
1   Egg - beaten
2 tablespoons 30mlChopped cilantro

Recipe Instructions

In a large saucepan, saute the garlic and shallots in the oil until they are light brown. Add the stock, fish sauce, crab, shrimp, corn, and black pepper. Bring to a boil, pour in the beaten egg, and stir to create egg strands. Boil for another minute, then ladle into soup bowls and top with a sprinkling of cilantro.
