Dinner Chowder

Recipe Ingredients

2 cups 292g / 10ozDiced raw potatoes
3/4 cup 46g / 1.6ozMinced onion
1/2 cup 55g / 1.9ozDiced celery
2 1/2 teaspoons 12mlSalt
2 1/2 cups 592mlBoiling water
4 tablespoons 60mlCorn oil
4 tablespoons 60mlFlour
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/2 teaspoon 2.5mlDry mustard
1 1/2 teaspoons 7.5mlBottled meat sauce (????)
2 cups 474mlMilk
1 cup 146g / 5.1ozGrated cheddar cheese
1 tablespoon 15mlMinced parsley
1 cup 62g / 2.2ozCanned tomatoes - drained, chopped

Recipe Instructions

Combine potatoes, onion, celery, salt and boiling water in a deep kettle. Simmer until tender, about 15 minutes.

Heat oil and stir in flour until smooth. Add the next four ingredients while stirring. Cook until thickened. Add cheese and stir all into the potato mixture. Add parsley and tomatoes. Heat through but not boil.

This recipe yields 6 servings.
