2 tablespoons | 30ml | Vinegar |
1 teaspoon | 5ml | Prepared mustard |
1/2 teaspoon | 2.5ml | Thyme |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |

1 lb | 454g / 16oz | Potatoes - (3 medium) |
1/2 lb | 227g / 8oz | Fresh green beans |
1 lb | 454g / 16oz | Red onion - thinly sliced (small) |
1 | Bite-size lettuce pieces | |
1 | Spam luncheon meat - (12 oz) - cubed | |
1 | Pitted black olives - (3 1/2 oz) - drained |
Combine cooking oil, vinegar, mustard, thyme, salt, pepper, and garlic; mix well; reserve.
Cook unpeeled potatoes until tender; drain. Cool to room temperature; peel and cube. Cut beans into 1-inch pieces; cook until tender crisp; drain and cool to room temperature. Combine potatoes, green beans, and onion; cover and refrigerate until cold.
Before serving, place lettuce in salad bowl; top with vegetable mixture. Place Spam in center; sprinkle olives over top. Pour on reserved dressing; toss well.
