Recipe Ingredients

6 tablespoons 90mlCooking oil
2 tablespoons 30mlVinegar
1 teaspoon 5mlPrepared mustard
1/2 teaspoon 2.5mlThyme
1/4 teaspoon 1.3mlSalt
1/8 teaspoon 0.6mlFreshly-ground black pepper
1   Garlic clove - minced
1 lb 454g / 16ozPotatoes - (3 medium)
1/2 lb 227g / 8ozFresh green beans
1 lb 454g / 16ozRed onion - thinly sliced (small)
1   Bite-size lettuce pieces
1   Spam luncheon meat - (12 oz) - cubed
1   Pitted black olives - (3 1/2 oz) - drained

Recipe Instructions

Combine cooking oil, vinegar, mustard, thyme, salt, pepper, and garlic; mix well; reserve.

Cook unpeeled potatoes until tender; drain. Cool to room temperature; peel and cube. Cut beans into 1-inch pieces; cook until tender crisp; drain and cool to room temperature. Combine potatoes, green beans, and onion; cover and refrigerate until cold.

Before serving, place lettuce in salad bowl; top with vegetable mixture. Place Spam in center; sprinkle olives over top. Pour on reserved dressing; toss well.
