Sicilian Penne Salad

Recipe Ingredients

1/3 lb 151g / 5.3ozPenne pasta - cooked al dente
1 lb 454g / 16ozBell pepper - medium julienned (small)
1 lb 454g / 16ozWhite onion - medium julienned (small)
1/3   Fresh broccoli - cut florettes
1/4 cup 59mlPepperoni - sliced, julienned
1/4 cup 59mlBlack olives - sliced
2 tablespoons 30mlPepperoncini peppers - sliced
  Dressing
2 tablespoons 30mlChopped garlicd
1/3 cup 78mlBalsamic vinegar
1/3 cup 78mlExtra-virgin olive oil
2 tablespoons 30mlTabasco brand Garlic Pepper Sauce
2 teaspoons 10mlBasil
2 teaspoons 10mlOregano
1/3 teaspoon 1.7mlFreshly-ground black pepper
1/3 cup 48g / 1.7ozGrated Parmesan cheese

Recipe Instructions

Assemble all salad ingredients in a large bowl, and make the dressing in a separate bowl.

Pour the dressing over the salad, toss and refrigerate over night.

Serve on radichio and garnish with fresh basil.
