Buffalo Taco Meat Recipe - Cooking Index
| 2 cups | Diced onion | |
| 2 cups | Diced green pepper | |
| 1/2 cup | Vegetable oil | |
| 5 lbs | Regular-grind buffalo | |
| 5 lbs | Course-grind buffalo | |
| 6 cups | Water | |
| 1/4 cup | Chili powder | |
| 4 tablespoons | Cumin | |
| 2 tablespoons | Granulated garlic | |
| 1/2 cup | Tabasco brand Pepper Sauce | |
| 3 tablespoons | Salt | |
| 16 oz | Refried beans |
Place onion and green pepper in a large brassier and saute in vegetable oil over medium-high heat until onions caramelize.
Place buffalo meat, water and all the seasonings, including the Tabasco brand Pepper Sauce, in the pan.
With a wire whip, breakup the meat until it is loose. Add the refried beans and bring to a simmer.
Braise the buffalo taco meat for about 2 to 3 hours over a low heat or until the meat is tender and the sauce has thickened.
