Buffalo Taco Meat

Recipe Ingredients

2 cups  Diced onion
2 cups  Diced green pepper
1/2 cup  Vegetable oil
5 lbs  Regular-grind buffalo
5 lbs  Course-grind buffalo
6 cups  Water
1/4 cup  Chili powder
4 tablespoons  Cumin
2 tablespoons  Granulated garlic
1/2 cup  Tabasco brand Pepper Sauce
3 tablespoons  Salt
16 oz  Refried beans

Recipe Instructions

Place onion and green pepper in a large brassier and saute in vegetable oil over medium-high heat until onions caramelize.

Place buffalo meat, water and all the seasonings, including the Tabasco brand Pepper Sauce, in the pan.

With a wire whip, breakup the meat until it is loose. Add the refried beans and bring to a simmer.

Braise the buffalo taco meat for about 2 to 3 hours over a low heat or until the meat is tender and the sauce has thickened.
