Tempeh 'Sloppy Joes'

Recipe Ingredients

1 tablespoon 15mlLight olive oil
1 tablespoon 15mlOnion - finely chopped (medium)
1   Tempeh, any variety - (10 to 12 oz) - finely crumbled
1/4 cup 36g / 1.3ozFinely-chopped green bell pepper
1 cup 237mlThick tomato sauce
1 tablespoon 15mlSoy sauce
1 tablespoon 15mlHoney or maple syrup
1/2 teaspoon 2.5mlChili powder
1/2 teaspoon 2.5mlCumin
1/2 teaspoon 2.5mlGarlic powder
  Whole wheat rolls or pita bread
  Shredded lettuce

Recipe Instructions

Heat the oil in a skillet and saute the onion until it is golden. Add the crumbled tempeh and green pepper and saute over moderate heat until the tempeh is lightly browned.

Add the remaining ingredients (except the last 2), stir well, and cook over low heat for 10 minutes. Serve hot on whole wheat rolls or in pita bread with shredded lettuce.

This recipe yields 4 servings.
