Tempeh 'Sloppy Joes' Recipe - Cooking Index
1 tablespoon | 15ml | Light olive oil |
1 tablespoon | 15ml | Onion - finely chopped (medium) |
1 | Tempeh, any variety - (10 to 12 oz) - finely crumbled | |
1/4 cup | 36g / 1.3oz | Finely-chopped green bell pepper |
1 cup | 237ml | Thick tomato sauce |
1 tablespoon | 15ml | Soy sauce |
1 tablespoon | 15ml | Honey or maple syrup |
1/2 teaspoon | 2.5ml | Chili powder |
1/2 teaspoon | 2.5ml | Cumin |
1/2 teaspoon | 2.5ml | Garlic powder |
Whole wheat rolls or pita bread | ||
Shredded lettuce |
Heat the oil in a skillet and saute the onion until it is golden. Add the crumbled tempeh and green pepper and saute over moderate heat until the tempeh is lightly browned.
Add the remaining ingredients (except the last 2), stir well, and cook over low heat for 10 minutes. Serve hot on whole wheat rolls or in pita bread with shredded lettuce.
This recipe yields 4 servings.
