Fasolakia Yiyantes Sto Fourno (Oven-Baked Greek Beans)

Recipe Ingredients

2 lbs 908g / 32ozDried giant white beans
2 cups 474mlOil
1   Garlic
3   Onions - med., chopped
1 tablespoon 15mlCelery - chopped
1/2 cup 46g / 1.6ozParsley - minced
  Salt and pepper to taste
1 cup 237mlHot water
1 3/4 lbs 794g / 28ozTomatoes - peeled, strained or
1 tablespoon 15mlTomato paste + 1 1/2 c water
  Addt'l water as needed

Recipe Instructions

Wash the beans, place in water, and soak them overnight. Drain them, then place in a pot of fresh cold salted water; cook for 45 min.; drain.

Meanwhile, place oil, garlic, and onions in a baking pan and bake in preheated 350F. oven until golden. Add beans, celery, parsley, salt and pepper, and hot water.

Bake 30 minutes longer. Remove from oven, stir the beans, pour in tomatoes (or diluted tomato paste). Return to oven and bake until only the oil remains.
