| 1 tablespoon | Vegetable oil | |
| 3 tablespoons | Onion - chopped (large) | |
| 4 x | Garlic - minced | |
| 1 teaspoon | Ground cumin | |
| 1 teaspoon | Ground coriander | |
| 1 teaspoon | Cayenne | |
| 1/4 teaspoon | Freshly ground black pepper | |
| 1/2 teaspoon | Ground turmeric | |
| 6 teaspoons | Potatoes - diced (large) | |
| 4 teaspoons | Tomatoes - sliced (large) | |
| 1/2 cup | Water | |
| 2 cups | Frozen lima beans | |
| Salt to taste | ||
| 1/2 cup | Cilantro leaves - for garnish |
In skillet heat oil over medium heat for 1 minute, add onions and fry for about 1 minute. Add garlic and ginger and continue frying for 1 minute. Add ground spices, mix well and add potatoes and tomatoes along with water and cook covered for 12 minutes. Add lima beans, mix, and cook for 5 minutes. Just before serving add salt and garnish.
