Batate Palya - Potato Curry W/ Lima Bean- Mangalore, India

Recipe Ingredients

1 tablespoon  Vegetable oil
3 tablespoons  Onion - chopped (large)
4 x  Garlic - minced
1 teaspoon  Ground cumin
1 teaspoon  Ground coriander
1 teaspoon  Cayenne
1/4 teaspoon  Freshly ground black pepper
1/2 teaspoon  Ground turmeric
6 teaspoons  Potatoes - diced (large)
4 teaspoons  Tomatoes - sliced (large)
1/2 cup  Water
2 cups  Frozen lima beans
  Salt to taste
1/2 cup  Cilantro leaves - for garnish

Recipe Instructions

In skillet heat oil over medium heat for 1 minute, add onions and fry for about 1 minute. Add garlic and ginger and continue frying for 1 minute. Add ground spices, mix well and add potatoes and tomatoes along with water and cook covered for 12 minutes. Add lima beans, mix, and cook for 5 minutes. Just before serving add salt and garnish.
