Nectarine Ginger Chutney

Recipe Ingredients

3/4 lb 340g / 11ozFresh ginger - minced
6 cups 1188g / 41ozGranulated sugar
3 cups 711mlCider vinegar
6   Garlic - mashed
8 lbs 3632g / 128ozNectarines - (about 24 medium), pitted and cubed
2   Onions - chopped (medium)
1 1/2 cups 355mlLemon juice
1 cup 160g / 5.6ozGolden raisins
1 cup 160g / 5.6ozRaisins

Recipe Instructions

Cover ginger with water in a saucepan and bring to a boil, turn down heat and simmer until tender, 35-40 minutes. In a large non-aluminum pot, mix ginger water, ginger, sugar, vinegar, and garlic. Bring to a boil and add remaining ingredients. Cook until thick, about 1 1/2 hours.
