Blintzes - Cheese Filling

2 cups 292g / 10ozDrained cottage cheese
1   Egg yolk
3/4 teaspoon 3.8mlSalt
1 tablespoon 15mlMelted butter
2 tablespoons 30mlSugar - (optional)
1 teaspoon 5mlLemon juice - (optional)

Recipe Instructions

Beat the cheese, egg yolk, salt and butter together. Add the sugar or lemon juice if you like -- some people like them sweet, some don't. Fill pancakes.
