Black Olives With Tomatoes And Capers Over Pa

1 tablespoon 15mlOlive oil
3 tablespoons 45mlGarlic cloves - chopped fine (medium)
1 tablespoon 15mlOnion - coarsely chopped (small)
1   Salt-free whole tomatoes - (16-ounce)
1 cup 237mlPitted black olives - drained and broken
3 tablespoons 45mlCapers - drained & rinsed
1 tablespoon 15mlBalsamic or good quality - red wine vinegar
1 tablespoon 15mlDouble-concentrate tomato - paste
2 teaspoons 10mlSugar
1/2 teaspoon 2.5mlDried oregano
  Cooked pasta of your choice

Recipe Instructions

In a large skillet or saucepan, heat the olive oil with the garlic and onion over moderate heat. When they sizzle, add the tomatoes, breaking them up with your hands. Then stir in the remaining ingredients. Simmer the sauce until it is thick but still slightly liquid, 5 to 7 minutes. Serve over cooked pasta.
