Pasta Chef's Chopped Salad

Recipe Ingredients

1 lb 454g / 16ozDitalini or orzo - or other small pasta
  Uncooked
4 oz 113gCooked turkey ham - diced into 1/4-inch
1/2 cup 73g / 2.6ozSwiss cheese - diced into 1/4-inch
3   Celery stalks - chopped
3   Scallions - sliced
1/2 cup 31g / 1.1ozDiced red onion
1/4 cup 36g / 1.3ozDiced black olives
  Salt
  Freshly ground pepper
1/4 cup 59mlDijon mustard
2 tablespoons 30mlVegetable oil
1/4 cup 59mlWhite wine vinegar

Recipe Instructions

Prepare pasta according to package directions; drain, rinse with cold water and drain again Place the pasta, turkey ham, cheese, celery, scallions, onion and olives in a mixing bowl. Season with salt and freshly ground pepper to taste.

In a small bowl, mix the mustard, vegetable oil and vinegar until combined. Add to the pasta and toss. Refrigerate for two hours and serve chilled.
