Halibut-Asparagus Stir-Fry (2 PTS)

Serves: 4 people

Recipe Ingredients

1 lb 454g / 16ozHalibut - swordfish or tuna
  Fillets, cut into 1-inch pieces
1   Onion - thinly sliced (medium)
3   Garlic - finely chopped
1 teaspoon 5mlFinely chopped gingerroot
1   Frozen asparagus cuts - (10 ounces) thawed
  And drained
1   Sliced mushrooms (3 cups) - (8 ounces)
1   Tomato - cut into thin wedges (medium)
2 tablespoons 30mlReduced-sodium soy sauce
1 tablespoon 15mlLemon juice

Recipe Instructions

1.Spray 10-inch nonstick skillet with cooking spray; heat over medium-high

heat. Add fish, onion, garlic, gingerroot and asparagus; stir-fry 2 to 3

minutes or until fish almost flakes with fork.

2.Carefully stir in remaining ingredients. Cook until heated through and

fish flakes easily with fork. Serve with additional reduced-sodium soy sauce

if desired.

1 Serving: 140 calories (20 calories from fat); 2 g fat (0 g saturated); 50

mg cholesterol; 350 mg sodium; 11 g carbohydrate (3 g dietary fiber); 22 g

protein.

Does fresh asparagus sound good? Use 1 pound, cut into 1-inch pieces, for

the frozen asparagus.
